HACCP
HAACP, or Hazard Analysis and Critical Control Points, is the internationally recognised set of standards which are applicable to food hygiene. The HAACP approach focuses on the “control points” where issues in food hygiene most frequently occur, and creates systems and procedures to prevent these issues from arising in the first place.
Who needs HAACP?
Any business which deals with food should adopt HAACP. These include:
- Restaurants
- Caterers
- Food service
- Pharmaceutical companies
What does HAACP mean for my business?
Anyone in your business who handles food will require food hygiene and safety training based in the HAACP standards.
Those people in your business responsible for training and supervising those individuals will also require adequate HAACP training.
HAACP forms part of a food business’s complete food safety management system, which usuall incorporates food safety, HAACP, and a business-focused quality management system.
